## Apigenin: the best-studied molecule in celery

**Apigenin** is a flavone from the polyphenol family, concentrated in celery, parsley and chamomile. Three properties dominate the research: its capacity to scavenge reactive oxygen species, its modulation of inflammatory signalling via NF-κB, and its binding to GABA-A receptors, which also makes apigenin interesting for sleep research.

Honesty belongs to the interpretation: most of these data come from cell and animal models. Controlled human trials with isolated apigenin are scarce. Eating celery regularly is not justified by a proven pharmacological effect, but by the fact that a flavonoid-rich vegetable pattern is consistently associated with better cardiometabolic health in observational studies.

## Luteolin and the food matrix

Alongside apigenin, celery supplies **luteolin**, a structurally related flavone, plus carotenoids, tannins and polysaccharides. Nutrition science calls the interplay of these accompanying compounds the food matrix effect: an isolated substance behaves differently in absorption and metabolism than the same substance embedded in its natural context. Heat is the enemy of flavonoids and vitamin C. Hot-air drying typically runs between 60 and 80 °C - heat-labile compounds are partly degraded.
